Chicken Adobo Flakes


I often make this for Mark since he loves to eat adobo flakes for breakfast and I find the store bought ones a little expensive considering its quite easy to prepare



Ingredients:



One whole chicken breast (bone in)

One half bottle of adobo marinade ( i often use silver swan - Php 15 per small bottle)

3 pcs laurel leaves

a few peppercorns

one cup water





Procedure:



Mix marinade, laurel leaves, pepper corns and water.



Boil in chicken with mixture in low heat for at least one hour or until chicken is very tender and meat is separating from the bones.



Drain chicken from the sauce. Reserve sauce for later use.



When chicken is cool enough to handle, remove meat from the bone and flake meat into desired thickness.



Put chicken flakes back to reserved sauce and continue cooking until sauce evaporates completely.



Place mixture in a container and freeze overnight.



Fry flakes in cooking oil until desired crispness is achieved.



Serve with salted egg and tomatoes on the side if desired.

Fatty Frog porridge, Taman OUG

One of the perks of maintaining a food blog, I'd say, is friends introducing food haunts to me :). And I'm lucky to have many foodies friends, always bringing me to try some yummies frequently.

Few days ago, we planned to cook dinner at my place; supposedly buying some wagyu to grill. And within a few minutes of discussion, Gary & Candy suggested for us to have dinner at Taman OUG instead.

Since I'm ok with anything, I let them do the ordering :).
It's always exciting to anticipate what you'll get for dinner right? hehehe
The wait was short and soon, I was presented with this..
Century egg with pork porridge in claypot.
The porridge was velvety and gooey, the century egg was chunky, giving the porridge a range of texture. The sliced pork was Gary's favourite, he said it's tender and very smooth.
The next claypot came soon after- I cant believe I'm having so many pots of porridge that night...
Took a glimpse and hey...not porridge after all..
It's frogs cooked ala kung pou style. Piping hot and lots of gravy, we're suppose to have it with porridge.
The frog's flesh was springy and had absorbed the flavours from it's ingredients. There's plenty of kung pou sauce for you to mix into the porridge- giving the porridge a spicy kick; and with the very hot temperature from the claypot- we were sweating buckets by the time we finished our first bowl. Unlike the usual kung pou, which has it's sauce cooked till dry and clinging to the meat, the kung pou here is more gravy like- hence we could add as much sauce as we like to enhance the flavour of a plain porridge. Very satisfying I'd say, especially on a rainy day.
Gary- lover of fish, cant help but to order a side of steamed fish head..
He ordered the ginger garlic steamed fish. The fish was fresh, the flesh was firm and sweet. One extra recipe in this steamed fish was the addition of chilli padi in it's steamed sauce (not as garnishing, but steamed with). So, when you take a bite of the fish, you'll first enjoy the freshness of the fish meat...and then the heat from the chilli seeps into your taste buds. And you'll wonder why the fish get spicier with each bite, even though it looks so harmless! :p
The bill was RM51 for these 3 dishes- I'm not sure of the breakdown though.

Frontera, Jaya One

A post that should be up long time ago- but the procrastinator in me just refused to budge- until now :D
Andrew suggested for us to meet at Frontera for makan session and also to celebrate Elaine's BD..Since I dont need to crack my head for suggesting a place to eat- I agreed on the suggestion immediately..hehe
Had a variety of stuff to try..
Top shelf guacamole (RM22.95)
Served with nachos, the guacamole dip's actually pretty addictive. Portion's quite small for that price though.
Frontera Nachos Chicken (RM26.95)
Based was crisp, topped with a nice thick layer of melted cheese and chopped chicken. Quite nice.
Taquitos de Pollo (RM19.95)
Served piping hot, this was a popular dish. The tortillas were extremely crunchy and very hot; goes wonderfully with the spicy eggplant base dip. But there were only 6-7 cigar sized taquitos- rather costly for the portion I'd say.
Chicken ranch salad (RM18.95)
Familiar tasting and looking- was glad that the greens were fresh, and the fried chicken- tender meat and crunchy batter.
We ordered the beef burrito (and also chicken)- RM22.95
The burrito was quite huge and topped with a nice dose of melted cheese. The filling was generous, I prefer the beef version though as the flavours were stronger :p. LH enjoyed the rice, he said the texture and taste were good.
The BBQ Pineapple Chicken (RM26.95)
This was definitely a miss. The chicken was dry and rather tasteless, the accompanying sides were just average.
The Fajita Platters combo (RM33.95)
Thick slices of beef, chicken, onions and capsicums served on hot skillet. Wrap it with warm tortillas, this was satisfying as the ingredients was fresh. Scrumptious.
Our final dish, Frontera BBQ Beef Ribs (RM49.95)
Extremely fork tender beef, very well marinated and smothered with their very spicy sauce. Well, one bite it's ok, but the more you eat, the spicier it gets. Very tasty nonetheless.
Overall, most hits than misses, well, at least you know there's more than just Chilli's,TGIF and Las Carretas for tex-mex food :)

Home Made Chicken Embotido


Made this last week just to give it a try and it turned out to be good.

I'll be making more next time.

Got the recipe from kitchenomics.com and just added some ingredients.



INGREDIENTS:



1/4 ground chicken meat

3 pieces cheese dog, cut into small pieces

1 small can green peas, drained

1 small carrots, cut into small pieces

2 small pack raisins

1 piece egg

2 slices pan americano, cut into cubes and soaked in evaporated milk

salt and pepper to taste



PROCEDURE:



COMBINE all ingredients.

WRAP every 3/4 cup of mixture with aluminum foil.

ROLL.

STEAM for one hour.

COOL and CHILL overnight.

UNWRAP and SLICE .

FRY before serving if desired.

Mark and I often eat out at Burger Joints when we go out. Gusto daw nya protein para pang build ng muscles. he he. Here's what we ordered at Big Better Burger (BBB) and Hot Shots.
Magkaibang araw yun ha? at medyo matagal na din pero ngayon ko lang naichika sa inyo.







Mark's Meal:


BBB - JalapeƱo Burger (approx php 160.00)

verdict: masarap daw sabi ni mark. juicy yung burger nila at sulit na din. separate yung potato wages (approx php 50.00) pati yung cheese dip bukod bayad (approx php 25)


Hot Shots - Cheese Burger (approx php 130.00)

verdict: di nagustuhan ni mark. parang lasang luma daw yung cheese. may kasama namang potato chips on the side. medyo oily nga lang.








My Meal:


BBB - Fish Fillet (approx Php 160.00)

verdict: nagustuhan ko sya. crispy yung patty at juicy naman yung fish. i ordered tartar sauce on the side. yun kasi bagay pag fish fillet sandwich.


HOT SHOTS : Fishermans meal (di pa nga ko sure kung eto nga exact na tawag sa inorder ko, he he- approx Php 160.00)

verdict: fish sandwich din inorder ko kasi nga bihira ako kumain ng beef. suprisingly ok sya sa kin kahit may wasabe. masarap nung mga unang kagat pa lang. pero habang tumatagal, parang may kakaibang after taste na din sya kaya di ko din naubos.


Overall verdict namin mag asawa? Babalik ulit kami sa BBB at sa Hot Shots, malamang hindi na. he he.

Spicy Shrimp and Tuna Spaghetti

This is my entry for this weeks' FOOD FRIDAY


SPICY SHRIMP AND TUNA SPAGHETTI



Very easy, very quick, very tasty recipe.

Ingredients:

Cooked spaghetti (cooked according to package directions)
Garlic
Olive oil
Dried Basil
Spicy Tuna (canned)
Peeled Cooked Shrimps (cooked in some chili and butter)
Salt and Pepper to taste

Directions:

Saute garlic in Olive oil
Add in canned spicy tuna
Saute for about 3 minutes
Add in cooked spaghetti noodles
Mix noodles with tuna then add the peeled cooked shrimps
Add in about 1 tsp dried basil and salt and pepper to taste
Serve hot and with buttered toast or baguette if desired.

Durian Layer Cake, Golden Bake

During a recent department makan session, Diha brought durian layer cake.
When she mentioned it a few days before, all of us had doubts.
What if the cake tasted of artificial flavouring instead?
Well, when we saw the durian layer cake (RM52, 1kg), it does looked plain...
Sorry that I didnt have the picture of the cake before it was cut..my colleagues were way too excited and cut it immediately..before we managed to take a look at it's pristine stage. :p
The durian cake was surprisingly good, much to our delight.
Akin to pandan or yam layer cake, the eggy sponge cake was layered with thick durian paste- not durian flesh type- but the same texture as pandan layer cake. Nonetheless, the durian fragrance and the creamy smoothness was still distinct. Obviously, this cake was a hit among those who enjoys the king of fruits. Have it really chilled- it's like having durian ice cream. Lip smacking :)

Sun Yin Loong, Kota Damansara

How was your sunday?
Mine was relaxing, started off with late breakfast at Sun Yin Loong with Jane.
And why there?
Jane wanted something close to home (town), and Sun Yin Loong has the ipoh white coffee which was very similar to those she can get back in Ipoh.
I ordered a cuppa for myself..
It was thick and aromatic, every sip was delicious. No wonder Jane's dad approves the coffee here.
The half boiled egg on toast..
Loved how it glistened under the sun light. Too bad the yolk was hidden, would have looked perfect if the yolk peeked out a little :p.

Add dash of pepper, drizzle some soy sauce and break the yolk...
Served on buttered, thick toast (hainanese bread)- the broken yolk was absorbed into the toast almost immediately. Yummy.
I had the pork noodles..
Supposedly from a famous stall in Ipoh Road..guess it didnt live up to the fame? It was very average. The sauce was too sweet, think they overloaded on the MSG.
Jane's char kuay teow fared better..
As per most kopitiam, you need to wait rather long for the CKT.. coz it's usually a popular order. Though the order was quite long, Jane got her's in ok time. Quite a lot of ingredients and had some wok hei. Jane was happy with it, said that it's not too salty and the noodles were thinner and smoother. (she guessed it might be from ipoh too :p)

In search of..... Recipes

As a "foodie"  (I really don't like that word!),  I am always on the search for new recipes.  Outside my collection of cookbooks, and fellow bloggers, as well as sites such as Epicurious (which I use several times a week) and Food Network, there are numerous places, both usual and unusual I have been looking for and finding great recipes that I'd like to share.


I am not sure how I found the site, but I subscribe to My Recipes.com, and they send me a new recipe everyday and so far, every one I have made has turned out great. It is a great site to explore, but I actually love getting the daily email recipe- it has often helped me break that "whadda you want for dinner" deadlock that happens in my house. And the price is right - you can sign up for free!



Looking into other people's family recipes isn't something you usually get to do, but I am fortunate that a coworker had a very fastidious cousin who wrote on recipe cards every recipe she ever tried.  When she passed away, this collection passed its way through her family, where relatives took the recipes they remembered most fondly out of the collection.  Since my friend knew I loved cooking, once family was done she gave the cards to me to peruse, and I am making my way through them . I have to admit I am taking my time browsing through them.  First of all, it is quite an experience to think of the time she devoted to writing these recipes down by hand and the effort put into developing a collection that she could share with her friends and relatives. In the today of copy and paste, and computerized recipe boxes, there is something really special about this and I actually want to savor this experience, since it is unlikely that I will have many such opportunities again.


Recently a Fresh Market opened across from Jefferson Lab (now there's a triple threat- one stop across from your work with a Costco, a World Market and a new Fresh Market!!), and while I do not buy my regular groceries there  I do shop their specials and to look for unique items I can't find anywhere else (it is Newport News, by the way!)  After trying a few of their prepared foods (including a very good shrimp and grits cake) it occurred to me to check their website to see if they had recipes there, and what a treasure trove! From appetizers to desserts, there are some amazing recipes just waiting to be tried and some have already found themselves into my menu planning.  Whether you are lucky enough to have a Fresh Market near you, you can enjoy the recipes and other great tips on their website, and they even offer shopping online!

Writing this post made me curious.  What places do you go to search for a good recipe or inspiration?  How many of you still have an old-fashioned recipe box or binder where you keep recipe favorites? Sharing of recipes is a great way to share your heritage, your ethnicity, your unique tastes, and your love... of food and friends!

Mark's Egypt Adventure

Before going home last 16Th of August, my husband, Mark had the chance to have a tour around the Great pyramids of Egypt since his flight was canceled for one day.





Here he is. Pointing at the Pyramid as if he's a giant.

Then he went to the museum where he purchased a papyrus of us and of Marianna that is now framed in our living room. He also bought me some oil of rose, mint & Cleopatra (perfume).

Sinigang na Hipon

My husband loves shrimp and his favorite is sinigang na hipon. He specially loves his sinigang with extra sampaloc.

Marianna's First Haircut


Ayan si Marianna bago kami umalis ng bahay. I call her "cousin it" from the adams family. Yung puro buhok? Di na kasi makita mukha at natatakpan na ng buhok.




After going to the Pedia for her Hepa Vaccine, we decided to have her hair cut sa Cuts for Tots sa Trinoma. Ayan muna ang mag ama at nagrequest pa na picturan ko sila sa harap ng store ng Nike.

Ayan sya as she prepares to get her hair cut. Pinikturan din sya dun para sa certificate (additional P 180.00 to the P 250.00 basic hair cut ) na may before and after pictures ng gupit nya at may kasamang strand ng hair. Babalikan namin yun after 2 weeks and I intend to get it framed. Lalagay ko yung certifcate sa room nya.

Ayan sya habang ginugupitan. Kung kailan malapit na matapos tska sya nag iiyak. Di nya kasi kilala si Barney. Puro barney kasi palabas ng tv dun. Hinahanap nya siguro yung mga Wonder Pets. he he.

Niloloko namin si Marianna nung natapos na gupit nya. Eh kasi naman sabi namin Dora style. E bakit parang mas kamukha nya si Diego. he he. Kamukha kasi talaga sya ni Daddy nya kaya ganun.
